3-Ingredient Yerba Mate Mochi

Ingredients: 

  1. Cooked Japanese Yam or Okinawan sweet potatoes (can be steamed or baked) 

  2. Sweet glutinous rice flour 

  3. A few tablespoons of Yerba Mate powder or loose-leaf Yerba Mate 

Instructions: 

  1. Prepare the yerba mate powder: Place loose leaf yerba mate in a food processor and blend until it becomes a very fine powder. Then, sift the powder through a fine mesh strainer to remove any larger leaf particles 

  2. Mash up yam or sweet potatoes with a few tablespoons of Yerba Mate powder. Add more of less Yerba mate to taste. 

  3. Mix in sweet glutinous rice flour until the consistency becomes soft, slightly sticky, and smooth. A general guideline is around 1:1 for sweet potato and sweet glutinous rice flour. 

  4. Roll and shape the mochi into spheres. Optional: use the back of a butter knife to make pumpkin-like indentations, and stick a yerba leaf onto the top for the stem 

  5. Steam for ~5 minutes or until fully cooked 

  6. Enjoy the mochi warm. For chilled mochi, refrigerate them in a sealed container until chilled.
